are two possible ways of doing this.
Create infotype 1027 'Site-dependent Additional Info' for the
organizational unit. Here you can define a factory calendar for the
organizational unit concerned.
Define a <DS:SIMG.SIMG_CFMENUOHP5OODK>Factory calendar</> independent
of the organizational unit specified. This factory calendar is then
valid when you do not maintain infotype 1027 for an organizational
unit.
