What causes this issue?

Since you entered a material for which a BOM already exists, a new
alternative is created for the existing BOM (-> multiple BOM).
This means that now you cannot create variants for this material.

System Response

If you entered an alternative, the alternative you entered is created
(provided it does not already exist). If you didn't, the system
determines the next available alternative and enters this as a default.
Note:
An alternative is exploded according to various criteria: in the
material master via the <LS>Alternative selection</> field, and in the
BOM via the lot size. You can also use the application to determine
that a specific alternative is exploded as of a certain date.
These settings may mean that no alternative is exploded.
