If the new chart of accounts exists already, the value specified for
this chart of accounts is used. If not, the value of the source chart of
accounts for which the priority indicator is set is used. If no priority
is set, and if the value differs for the different source charts of
accounts, the logon language is used.

You can overwrite the maintenance language in Customizing for the new
chart of accounts (view <ZK>New chart of accounts - Customizing</>).
